Leeks Fondue (Fondue de Poireaux)

The preparation of leeks as Fondue de Poireaux is similar to the Carrots Façon Vichy, with and active phase on higher heat for browning (about 15 minutes), and a much longer low heat passive phase, with cover, for at least one hour.
