Mixed Spring Vegetables

The mixed Spring Vegetables (Jardinière de Légumes) include some (preferably fresh) onions, green peas, carrots and potatoes. I add some laurel and thyme (see figure), as well as a small glass of white wine.

Let the onions and carrots brown a bit, and then add the other vegetables, herbs and wine. Cook on slow heat with a cover for 45 minutes to one hour (the carrots should feel soft when picking with a knife).
